good news - there is a solution
solution:

head restraint for rear seat is actually very easy to remove!

my local volvo dealer printed this for me today:

my slotted screwdriver was perfectly fine to remove these bolts =)

I've clipped plastic cover back and it does not look horrible at all

as a bonus the head restraint fits perfectly into subfloor of the boot

time required to mount/dismount ~ 1min

I hope it will be useful for anyone trying to install 2\3-group child seat and encountered an issue where seat is touching head restraint\headrest and cannot be installed properly because of this gap in between car seat and child seat

Great post. Encountered this issue myself as I have not yet found a decent stage 2-3 seat that will fit! What were Volvo thinking of?!

Haven't hit this problem yet as my daughter is 2 1/2, but it may prove useful when the time comes.

I can't quite make out the second page of the instructions though.

Instructions from what I can see are,
-Fold headrest forward.
-Pull off plastic cover.
-Unscrew bolts.
-Remove Headrest ?
-Then second page shows something I can't make out, is that stripping the cover off the headrest ?

The instructions relate to replacing the cover on the headrest. The second page shows the removal of the cover once its off the car

You wont need to do this if you are removing the headrest to fit a seat
