For example, my Dad's V70 is a 57 plate (September 2007), but its a facelift, so its a P3. There's V70's that were released 6 months previously in March 2007, but they weren't facelift and are completely different in terms of looks, design and interior layout to my Dad's.

As the original poster's car is a 2007, its right on the cross-over point from P2 to P3. If its a 2007, its highly likely its still the older P2 shape.
p2 models after 54 plate are called p2 face lift. with rear lights that dont have diffusers in the outer lenses there are also quite a few other differences p3 is a completely different car.and shares no common parts with the p2 although both were available in 2007. wikipedia have a full listing of models and types and specs.which can help people who are unsure which model they have in there possessionps the ps pump on the p2 facelift is different than the earlier models the difference is on the pre 2004 cars the pipe screws in the latter type is held in with a small bolt and tab on the pipe.
