This is standard on all Volvos with this type of key (most modern Volvos)
nothing really new.

I generally start the car and take the key out. I don't keep my house and cars keys on the same ring but find that the keyring on the key can bang off the dash. No issues with steering lock.

Steering lock won't engage until drivers door is opened, same on all new volvo's

Thats what the zipping sound is when you open door from dash

No it's all good, if you stall it just put it in neutral and press the clutch and it'll fire up again without the key in the ignition, you have to kill the engine via the switch for it to not start again.

Question..
once started this way, can I then get out of the car and use the fob to lock the doors?

I am thinking winter warm up times here.

As long as you remember to press the start/stop button to switch off the engine, yes you use the fob to lock the car.
