They do work but that one looks like a dissy capacitor. I use much larger values on my 122 to reduce electrical noise. That one will be about 0.5uF and I use 2000uF.
You can regard a capacitor as a minature battery. If there is a spike in the electrical supply it will try to absorb it. Likewise, if there is a tiny gap (eg something taking a big gulp of current) it will try and fill it in. I won't get into the high frequency aspects and wiring inductance! :-)
