The train weight etc is all legal and above board as is the whole set up.
You are right about the weight distribution, it is pretty crap and not helping I will be sorting that ( or at least making it a tad better in the not too distant future.
Firstly I will be taking the advice of your good selves and getting a stabilizer hitch thingy for a start.

never use a stabilizer to stop a known problem, they are there as assistance only not a cure.

check the vans balance/loading, nose weight and coupling height(van should be nose down otherwise the wind can lift the weight off the rear of the tow vehicle)

The trailer does sit a tad high on the hitch. Do you think putting a drop hitch so it sits nose down would help ? The only thing of any weight in the trailer is the griddle. I can just lift it on my own. This sits at the back of the trailer, I do intend to move it to the front as soon as I can get a plumber here to do it. ( that's another thread all together)

If you stand it on level ground with support legs up and lift jockey wheel does it sit hitch down??

It should sit slightly nose down therefore I would fit a down plate (about £10)on your towbar to correct some of the instability.
Is this a home made trailer van as there are a few of them about that are tail heavy because the wheels are in the wrong place?

If theres no weight on towball then you get ome wind resistance on front of trailer it will make trailer rear end heavy and unstable,

Need to make it hitch heavy probably around 30-40kg should make it alot more stable

Disco2?
nice and cheap, sensible size, great traction and tows anything with that airbag suspension set up, and they have active cornering enhancement too.
Just don't grizzle when it goes wrong or you have to replace ACE pipes!
Or it leaks water down the seatbelts. Yuk.

As heckflosse said, Disco 2 could be a good shout! (I'd suggest a Defender DCPU or van but sounds like it wouldn't be a popular choice)

I drive a Disco 2 TD5 daily. It's the facelift last of the line 2004 model. Manual gearbox, no diff lock but I've never got it stuck (and I have tried), mine has no ACE to go wrong, no air bag suspension either (the more basic ones never did, mine was downgraded by a P/O)

It'll legally pull 3500kg and shrugs most things off! Having pulled a full size Ifor box trailer behind mine at around 2.5 tonnes loaded, it does feel it somewhat on the hills, but it doesn't sound like you're pulling a lot of weight, just a lot of wind resistance.
