Because that's what it's supposed to do?

The first part of the alignment process is to set the road wheels in the dead ahead and the lock the steering wheel in the straight position.

The rest of the steering and suspension adjusted and is locked to this position.

I doubt anyone would post asking why something has been corrected/fixed. More likely the OP has made a typo and is really asking why his steering wheel is NOT straight after having wheel alignment done.

Steering wheels are usually on splines and can be removed and straightened if care is taken regarding the airbag and the correct procedure followed.

Hi not sure what the original OP is asking but moving the steering wheel on the splines on any modern car in most cases won't be possible as they usually have a master spline to prevent this .
The safety systems need to know where the wheels are pointing and have to be set up accordingly (cameras etc)
On older cars this can cause problems with unequal length track rods
There is also problems with indicator cancelling mechanisms
