Yes a drop can be normal once stationary but it can depend on the circumstances.
I've been on the motorway in summer then hit a very dense traffic jam and the coolant temperature has risen even at idle from heat soak.

OPs starting point is 112°C so a few degrees drop when idling would still be over 100 which definitely isn't normal.

Carried out as suggested.

Drove car with heater turned to Low position. Drove car until a steady 107deg engine temp.
Turned heating up full with all vents opened, engine temp dropped to 105deg within 3 seconds, very hot air coming from vents. Passenger side was possibly not as hot. The instant I increase speed the temp almost instantly increases 1 deg every 3 seconds and vice versa. When I stop and switch of engine I can hear the radiator fan gradually decrease speed in time with engine temp reduction and fan speed on live data. Engine drops to 96 deg almost immediately 15-20secs.

Assuming the cooler passenger side is a flap/motor not directing enough warm air, it sounds like a lazy coolant thermostat not opening soon enough and/or wide enough.

After you next go for a run, check both heater coolant pipes at the back of the engine bay and see if they're equally too hot to hold.
If they feel the same high heat, the heater core is circulating fine.
If one pipe is noticeably cooler, the heater core needs flushing and the thermostat will hopefully be ok.

Also feel the radiator top and bottom hoses.
The top hose should be too hot to hold all around it.
The bottom radiator hose should be cooler but cool.

I have already had a genuine volvo thermostat and genuine volvo temp sensor fitted. Unfortunately my engine is one of the few engines to have thermostat at the rear of the engine.
incidentally does anyone know what temp the engine reaches when carrying out a regen?

Right so they're known to not last as long as older thermostat types but as it's a recent one (and they're flipping awkward) let's assume that's ok..... For now.

At least until the various hoses have been checked.

Not sure on the regen coolant temp.

There’s a fuse box in the engine bay next to your battery, along the passenger side wing basically. The relay for the glow plugs is underneath that cover, as well as many others!
