Hear is an example of what you have just said and i found this morning with my T5.

I have been driving carefully in the town and a long run on the Mway at 70mph to get my mpg average up a bit, and today going out decided on a bit of the heavy boot and i was missing 5psi at WOT in 3rd and 4th but on the way back home the boost acted as it normally does 20psi at whatever i do.

The ECU does simply give to you what you give to it in terms of driving behaviour it learns what you do and how you drive, yes, of course all the hardware has to be in order but it still comes down to how you drive to get consistant results.

At least you have arrived!
