think they idle at 6000rpm and rev to almost 20000rpm!

Yeah I knew it was a high figure.
Very easy to let the revs drop too much when you dump the clutch in one of those. Ker-splut! Game over.

You don't mean that the rollers can offer so much resistance that an F1 car couldn't turn them at full power and therefore would stall, do you...?

Also as you patently know so much about this rolling road, why can you not/will you not, tell us what its measuring capabilities actually are?
