I've booked the car in for it's regular service on Tuesday so I'll see what the garage thinks. It's a Volvo independent, not a dealer. I've got a feeling it's going to be an expensive visit

I'd second that. I had what sounds exactly like your issue and it was the Fuel Pressure Regulator. Wasn't a cheap part at £140 but it solved the problem straight away.

I'll suggest that part to the garage. I hope it is that, then it's not too expensive and it'll save labour charges looking for the fault.
I'll post how I got on tomorrow....

Picked the car up yesterday and I don't want to speak too soon but it looks like its all sorted, and yes it was the Fuel Pressure/Temp Sensor.
Drove to work & back yesteryday with no issues and the car also seems to have a smoother throttle. You probably don't notice it gradually deteriorating over the years but it felt like a massive improvement and it also feels to have, not more power, but more instant zip if you know what I mean.
Many thanks to all the people that have replied. It seems that this is quite a common part to go judging by all the posts on forums. I wouldn't say it's an issue it just seems to wear out over time like any part and it's only when the stuttering occurs that you realise somethings wrong.
I'm just glad everything's back to normal

i have a 97 plate 850 T5R manual that stutters when i start to drive from cold if i put my foot down. when i ease the pedal it does calm it down but you can still feel it. even when it warms up and you try to sit at 30 in 3rd gear it doesn't like it until i bury my foot again. the only way i can get rid of the stutter is to keep it over 2500 rpm in any gear??? any thoughts please...

Will be most likely be a boost leak on a 850...
