When the engine is warm and you put the gear selector into Drive the car slams into gear with the force of a 10 ton truck rear ending me. It's been to the main dealer to have the gearbox adaptions reset. After that the car performed perfectly for 3 weeks. Then the problem came back. I took it back to the dealer and they flushed out the gearbox fluid, refilled it and reset the adaptions again. That lasted for two weeks and now the car is banging and crashing into gear again. The main dealer now tells me the next step is to replace the gearbox valve body at a cost of £2500 to £3000. There's no way I'll be paying that.

Any suggestions?
Take it to another volvo dealer , resetting the adaptions can only make it worse until it re adapts itself which can take days or over a week ,
There is a well known adaption test procedure they should be doing , There is a built in adaption mode which shows in the Instrument panel . get them to do this procedure , The gearbox must have the latest software before then can do this .They really should know all about this ! valve bodies won't fix it .

I think that this 'adaptation' is smoke and mirrors as all my Volvos have had this feature and I have never noticed it doing anything to make the changes smoother, cleaner it happen at a different time.

before Volvo decide to replace my gearbox the gearbox we reset many times and it never changed a jot.

Has anyone else ever noticed that this feature does anything - if so, what was it that it did?

You are thinking of the adaption that takes place with different drivers , if only you drive the car you will not notice anything .
I am talking about the Built in Test mode which adapts the N-D function . It is successful in curing the N-D jolt in most cases ... Only able to activate it via VIDA . The car must have the latest transmission software before this is possible .

You are correct in that I am talking about the sales material which is not relevant to diagnostics modes that are enacted by the repair agency.

Several people drive my current XC60 and the drive feels the same immaterial of who is driving - and how would the car know that someone else is driving?

I have asked what this adaptation is before, both here and from Volvo, but I have yet to have any explanation of what it does, how it benefits anyone or anything that will make me (and others) consider it something more than a sales gimmick.
