did you ever get to the bottom of why the manual has less nose weight than a auto???

In general, the nose weight of a car is defined as 7% of the kerb weight. With the XC60 the kerb weight of the manual version is lower than the automatic, hence the difference in nose weight.
I have had trouble finding out the actual kerb weight of my XC60 AWD Geartronic. I tow a 1600kg caravan, stick with the 90kg nose weight limit and find the tow effortless and stable, which is reassuring. David

The automatic torque converter can act as a low ratio gerbox so it will be able to pull away more easily for the hill test.
The automatic will have a different balance with more weight at the front to counter the rear downward force so help with a higher noseweight. Also the four cylinder FWD has a lighter engine and lighter transmission than the AWD which all have 5 cylinder engines and heavier transmission. The automatics have trailer stability control as well and I think that can up the maximum towable weight.

As people have said it's all to do with gradeability or the ability to start on an incline. Land Rover with their earlier low power Defender/Disco chassis can legally tow 3500kg, as they have the low gearing to let you get going
You then get into GVW and the heavier the car the more comes off the towing limit For nose weight the sums need to be done with the axle weights. As was mentioned the different setups puts the weight in different places so the axle loadings vary Tyres also have limits though I suspect XC60 ones are well within. If you see an artic tractor unit with what looks like a chunky from wheel it probably has been uprated to 8T over the standard 7T. This is down to springs and tryes being upgraded Axle ratings are also on the weight plate so we can all do the sums and compare
