Tend to agree with Sam on this, taking the air/fuel mixture through 90 degrees seems like doing it the hard way when the SU option is a clean side draught.

On SU's, mine will run well over 6000rpm having had the various mods needed and I seriously doubt going the Weber route would have that much effect other than right at the top of that range. You can get them to look good too!
