I usually jack on those metal plates you mentioned (if you mean the rear subframe mounts) and then put my axle stands under the front subframe rails (about 1/2 way between the two wishbone mounts if it makes any difference) it's very sturdy never been an issue

you can lift it in the middle at the front but there is the slight risk of movement / slippage / punching a massive hole in the bottom of your radiator. I tend to avoid that at the loss of about 2-3 mins extra effort

chocks behind your rear wheels as well don't forget
