I am going to answer my own questions as I have had the answers provided by Volvo CS:

First to confirm the car I have. It is the all electric XC40 with Google Assistant built in.

All 'Google Built In' Volvo's come with a free four year subscription SIM card with unlimited data usage. As it is unlimited usage, there is no wifi hotspot in these cars.

The network provider is EE (T-Mobile) which I believe is a BT subsidiary.

The SIM card is 'buried' in the car 'some where'. This seems to be a bit of a secret as Volvo CS did not answer this question.

It is not possible to know how much data being used as there is no website\company you can register the sim card with.

I suppose technically it may not a sim card as we know it. It could be some sort of dedicated device.

I guess in future we may see non-Volvo third party companies provided replacements that will be cheaper than Volvo provide.

Maybe someone who works for Volvo can provide more information on this?
