There was someone advertising a rear set conversion for the later V70 on Ebay the other day. Starting price £200. However I understand that its not easy to fit and was quoted 4 hours labour by my local independant. If you found a car you wanted that didnt have the rear seats youy could still get it supplied and fitted for about £750.
The other consideration is that its not easy to pack the boot when its full of children (and their legs). We've considered the 7 seat option for our V70 and rejected it on that basis and not wanting the children to share the boot with muddy dogs.
IMHO If you really want 7 seats i'd look at an MPV and I speak as someone who likes their V70...
